Recipe: Weet-Bix & Peach Muffins

1 can of peaches or other tinned fruit

8 Weet-Bix biscuits crushed

1 cup wholemeal flour

1 cup standard flour

½ cup soft brown sugar

3 tsp baking powder

1 tsp cinnamon

¾ cup milk

2 eggs

1 tsp baking soda

50g butter, melted


  1. Drain fruit and chop into pieces. Reserve the juice for later.

  2. Mix dry ingredients (except soda) in a bowl.

  3. Add the chopped fruit.

  4. In a separate bowl, combine milk, fruit juice, eggs & baking soda. Whisk to mix.

  5. Pour egg mix into dry ingredients.

  6. Add melted butter. Mix to combine.

  7. Spoon into greased muffin tins.

  8. Bake at 190°C for 15-20 minutes, or until muffins are golden and spring back when touched.

  9. Allow to cool for a few minutes before turning out.



Tips: 1/3 cup crumbs = 1 weetbix.

Do not over-mix, or the muffins will be tough.
