Recipe: Orange Cake

125g butter

1 cup sugar

2 eggs

¾ cup orange juice

2 cups flour

4 tsp baking powder

Sugar & grated orange rind for topping


  1. Melt butter and sugar in a large saucepan

  2. Remove from heat

  3. Lightly beat eggs & juice together; add to saucepan

  4. Add sifted flour and baking powder

  5. Mix with wooden spoon until combined

  6. Pour into a baking-paper lined 20cm cake tin

  7. Sprinkle with a little sugar and some grated orange rind

  8. Bake at 180°C for about an hour, or until cake springs back when lightly touched
