125g butter
1 cup sugar
2 eggs
¾ cup orange juice
2 cups flour
4 tsp baking powder
Sugar & grated orange rind for topping
Melt butter and sugar in a large saucepan
Remove from heat
Lightly beat eggs & juice together; add to saucepan
Add sifted flour and baking powder
Mix with wooden spoon until combined
Pour into a baking-paper lined 20cm cake tin
Sprinkle with a little sugar and some grated orange rind
Bake at 180°C for about an hour, or until cake springs back when lightly touched
