This savoury recipe uses old bread and leftovers. However, you will also need milk, eggs and cheese.
Eat for lunch, or serve with salad or vegetables for dinner.
Ingredients:
Bread slices – use up crusts and/or stale bread
Leftovers: any combination of cold meat and cooked vegetables; or use salami, ham or bacon (etc) near their use-by date. You can also use up little bits of hummus, cottage cheese, dips etc – whatever needs clearing from your fridge.
Onions, or spring onions; Optional: garlic, leeks, beans, peppers (etc)
Cheese, eggs, milk
Chutney, pickles to taste
Method:
Grease a lasagne or baking dish.
Cut the bread into triangles. Line base of dish with half the bread.
Fry the onions & any raw vegetables in a little oil until soft. Scatter over the bread.
Chop up any meat leftovers into small pieces and scatter over bread dish.
Add any cooked vegetables or other leftovers (avoid too much liquid e.g. gravy or sauce)
Add a small amount of chutney, or pickle for flavour if you like.
Scatter 1/2 cup grated cheese over, then lay the remaining bread over the top (in one layer).
In a bowl, beat 2 eggs with 2 cups milk using a fork or whisk (use less if you’re only making a small portion). Season with salt & pepper. Pour over bread.
Leave for at least 15-20 minutes for the milk mixture to soak right through the bread.
Sprinkle 1/2 cup grated cheese over the top.
Bake at 190°C for 30-40 minutes until puffed up and golden brown. Serve warm.
