Recipe: Quick Quiche

Forget time-consuming pastry and complicated instructions. All you need to make this quiche is a bowl, a spoon, and a pie dish.


Ingredients:

4 eggs

1½ cups milk

½ cup self-raising flour

½-1 cup chopped meats (e.g. ham, bacon, salami, cooked chicken)

1 cup grated cheese

½ cup chopped green vege (e.g. beans, broccoli, spinach, peas, asparagus, pepper)

Salt & pepper to taste


Method:

  1. Beat together eggs and milk

  2. Sift in flour

  3. Stir in remaining ingredients

  4. Mix until combined (make sure there are no flour lumps)

  5. Pour into a greased quiche or pie dish

  6. Bake at 170°C for about ¾ hour, or until firm and golden brown.


Serve warm with salad and chutney; or slice and eat cold for packed lunches / picnics.

You can also make mini-quiches by cooking in muffin tins (reduce cooking time).
