This easy method creates a delicious and inexpensive meal with sausages, potatoes, boiled vegetables and tasty gravy all cooked in one pot. It works well for one person or a whole family: just alter the quantities to suit your appetite.
You will need:
Sausages (cut into thirds or quarters)
Onion
Potatoes
Root or casserole vegetables (eg. carrots, leek, celery, parsnip)
Flour
Oil or fat
Salt, pepper, herbs, bay leaf
Water or stock
A saucepan that is just big enough to take your meal ingredients – they need to be crowded together.
Method:
Fry chopped onion in oil or fat until clear.
Remove pan from heat, and stir in a little bit of flour.
Gradually add a small amount of water or stock, and mix until flour dissolved.
Return pan to medium heat.
Add sausage pieces, and chopped potatoes and vegetables (roughly chopped: not too small or they will go mushy; not too big or they'll take ages to cook through).
Add salt, pepper, herbs, bay leaf to taste.
Top up the liquid until vegetables are barely covered.
Loosely cover pan with a lid and boil very gently for 30 minutes, or until potatoes and sausages are cooked.
If needed, thicken the gravy with a little more flour.
Serve on its own, or with green vegetables.
Re-heat any leftovers and serve on toast for lunch.
