This recipe takes barely a minute to prepare.
1 cup desiccated (or shredded) coconut
1 cup self-raising flour
1 cup sugar
1 cup milk
Combine in a bowl.
Pour into a greased/lined cake tin or loaf tin.
Bake at 180°C (170°C fan assisted) for 30-40 minutes, or until lightly browned.
Variations:
Serve warm with cream or ice cream for dessert.
Eat as is, or ice with your favourite icing.
Serve with fruit syrup or yoghurt.
Add a bit of vanilla essence or other flavouring to your mixture before cooking.
Reduce the sugar slightly, and serve as a loaf – sliced and buttered.
If you've got any left over after a couple of days – slice it and toast it.
