Recipe: One Minute Coconut Cake

This recipe takes barely a minute to prepare.


1 cup desiccated (or shredded) coconut

1 cup self-raising flour

1 cup sugar

1 cup milk


Combine in a bowl.

Pour into a greased/lined cake tin or loaf tin.

Bake at 180°C (170°C fan assisted) for 30-40 minutes, or until lightly browned.


Variations:

  • Serve warm with cream or ice cream for dessert.

  • Eat as is, or ice with your favourite icing.

  • Serve with fruit syrup or yoghurt.

  • Add a bit of vanilla essence or other flavouring to your mixture before cooking.

  • Reduce the sugar slightly, and serve as a loaf sliced and buttered.

  • If you've got any left over after a couple of days slice it and toast it.
