Recipe: Oakhill Potatoes

Serves 4


4 medium potatoes

4 hard boiled eggs, sliced

2-3 rashers bacon

6 tbsp butter

4 tbsp flour

4 cups milk

2 tsp mustard

100g grated cheese

1/2 cup breadcrumbs


  1. Cook potatoes and slice.

  2. Layer potato in greased dish with bacon and sliced eggs.

  3. Meanwhile, melt 4 tbsp butter in a small saucepan over a medium heat.

  4. Stir in the flour and cook for about 1 minute until frothy.

  5. Remove from the heat. Gradually add the milk, stirring constantly.

  6. Return to the heat, stirring until the sauce boils and thickens.

  7. When white sauce cooked, add cheese and mustard.

  8. Pour cheese sauce over potato, bacon and egg dish.

  9. Sprinkle breadcrumbs on top and dot with remaining butter.

  10. Cook until bubbling in 200°C oven.
