Recipe: Leftovers Curry

Use up any meat and vegetables left over from a roast or BBQ.


1. Melt 60g butter in a saucepan.


2. Add the following ingredients chopped small:

  • 1 onion

  • 2 rashers bacon, or sliced ham/salami

  • 1 large tomato

  • Cooked or raw vegetables (e.g. peas, cauliflower, carrot, celery, leek, parsnip, potato, courgette)

  • 1 apple or pear

  • 1 tbs coconut

  • 1 tbs marmalade or jam or chutney

  • 1 tbs curry powder (or more to taste)

  • 1 tbs currants

  • 1 tbs sultanas

  • 1 bay leaf

  • Salt & pepper


3. Cook for about 20 minutes, or until vegetables soft.


4. Add 2 tbsp flour, stirring until well mixed.


5. Add 500ml water, or fruit juice/water mix. Stir.


6. Add cold meat (e.g. beef, lamb, pork, chicken), cubed.


7. Cook for a further 20 minutes. Serve with rice.
