Recipe: Flatbread

Run out of bread? Can't find any yeast at the supermarket? No time?

These flatbreads are quick and easy to make.

2 cups flour (standard or wholemeal)

½ tsp salt

1 cup cold water

  • Combine salt and flour in a mixing bowl.

  • Stir in the water until well mixed and a dough forms.

  • Knead for 5 minutes.

  • Divide dough into 8 balls.

  • Roll out each dough ball thinly (on a lightly floured surface).

  • Cook each one in turn in a hot frypan, for 2 minutes each side. (No need for oil if you're using a non-stick frypan.)

Use for sandwich wraps, tortillas, dips; or as an accompaniment to curries, casseroles or soup.

You can add 4 tbsp olive oil to the mixture with the water if you like.
