Recipe: Fiona's Fish Dish

Use any flaky or fleshy white fish for this dish (e.g. snapper, tarakihi, hoki, cod). You can use a mix together: e.g. bulk it out with an inexpensive mild fish, and add a little bit of smoked fish for flavour. Use fresh or thawed fish. This is a good way to use up cream that is near its use-by date.


Skin fish and cut into cubes. Place in an oven dish (in one layer).

Scatter over cherry tomatoes or roughly cubed fresh tomatoes.

Pour over cream until fish/tomatoes almost covered.

Top with a little grated cheese (a strong flavoured hard cheese is best, e.g. tasty, gruyere, smoked)


Bake in a moderate oven for approx 20 minutes, or until fish cooked and cheese melted.


Serve with crusty bread or cubed potatoes, salad or green vegetables.
