Recipe: Double chocolate muffins

1¼ cups flour

¼ cup cocoa

2 tsp baking powder

½ cup brown sugar

100g butter

2 eggs

½ cup milk

1 cup chocolate chips


  1. Sift flour, cocoa and baking powder into a bowl.

  2. Stir in brown sugar.

  3. Make well in centre of dry ingredients.

  4. Melt butter, and pour into well.

  5. In a separate bowl, lightly whisk eggs and milk until combined. Add to muffin mixture.

  6. Add chocolate chips.

  7. Mix to just moisten (do not over-mix, or muffins will be tough).

  8. Threequarter fill greased, deep muffin tins.

  9. Bake at 190°C for 20 minutes, or until cooked (when a skewer inserted into the centre of a muffin comes out clean).

  10. Serve warm!
