1¼ cups flour
¼ cup cocoa
2 tsp baking powder
½ cup brown sugar
100g butter
2 eggs
½ cup milk
1 cup chocolate chips
Sift flour, cocoa and baking powder into a bowl.
Stir in brown sugar.
Make well in centre of dry ingredients.
Melt butter, and pour into well.
In a separate bowl, lightly whisk eggs and milk until combined. Add to muffin mixture.
Add chocolate chips.
Mix to just moisten (do not over-mix, or muffins will be tough).
Threequarter fill greased, deep muffin tins.
Bake at 190°C for 20 minutes, or until cooked (when a skewer inserted into the centre of a muffin comes out clean).
Serve warm!
