Recipe: Apricot Loaf

2 tbsp golden syrup

1 cup milk

½ cup sugar

1½ cups flour

1½ tsp baking powder

½ tsp baking soda

1 cup chopped dried apricots


Melt syrup in warm milk.

Combine dry ingredients, including apricots, in a mixing bowl.

Stir in syrup & milk mixture.

Stir until combined.

Pour into a greased loaf tin and bake at 190°C for about ¾ hour.


Slice and serve with butter. Especially delicious when served warm.


Tips:

If apricots are hard, soak in the milk for about ½ hour to soften them.

You can substitute any other dried fruit if you don't have any apricots.

For a dairy-free option use soy milk.

You can also replace flour with a good gluten-free alternative.
