Recipe: Anzac Biscuits

¾ cup flour

1 cup sugar

1 teacup coconut

1 teacup rolled oats

¼ lb butter

1 tbsp golden syrup

1 tsp baking soda

2 tbsp boiling water

1 cup walnuts, if liked


Mix together flour, sugar, coconut and rolled oats (and nuts if desired).

Melt butter and golden syrup.

Dissolve baking soda in boiling water, add to butter and golden syrup.

Combine.

Put spoonfuls on cold, greased trays.

Bake 15-20 minutes at 180°C


This is an old Morrison family recipe. Dorothy Morrison was a member of Willow Avenue Chapel from the late 40s until her death in 1991. She was known affectionately as "Grandma Morrison" by many people even those not related to her.
