Recipe: Anything Slice

This slice is very quick and easy to make, requires minimal equipment, and can be made from almost anything. Get the kids baking!

Equipment:

Stove element, oven, large saucepan, stirring spoon, measuring cups & spoons, sieve, slice tin.


Ingredients:

125g butter or dairy-free spread

¾ cup soft brown sugar or muscovado sugar (or any other sugar, if that’s all you have)

2 tablespoons golden syrup (or treacle, corn syrup, maple syrup, or honey)

1 cup crushed cereal (any type) or muesli, or rolled/porridge oats

¾ cup raisins or other chopped dried fruit (or less if you don’t have much)

1 cup flour (plain, wholemeal or gluten-free)

1½ teaspoons baking powder

½ teaspoon mixed spice (optional; or substitute ginger, or nutmeg, or cinnamon)

Method:

Use a large saucepan to melt butter or spread, sugar and syrup.

Once melted, remove pan from element. Add cereal and fruit to the pan. Mix.

Sift in flour, baking powder, spice.

Mix until combined, making sure all dry ingredients are moistened.

Press mixture into a greased slice tin.

Bake 180°C for 15-20 min (until it looks brown and starting to crisp at edges)

Allow to cool before removing from tin and cutting up into squares.

Tips:

  • Save the crumbs from the bottom of your cereal packets, or use up stale cereal.

  • Any cereal will do: from fancy granola to honey puffs! Tastes better with a real mix!

  • Some cereals soak up liquid more than others. Use less flour if this is the case.

  • Dairy-free spread is oilier than butter. You may need to add a bit more flour.

  • The mixture should look moist but not runny: you’ll be turning and squishing it rather than stirring. Watch out for dry patches where flour or cereal not mixed in. If it looks too dry, add a touch more melted butter. If it’s too wet, add more flour or cereal.

  • If you don’t have weighing scales, you can judge the butter/spread by its packet size: 125g is ¼ standard block of butter or tub of spread (check the labelling on your packaging).

  • The consistency and taste will change depending on which ingredients you use – experiment to find your favourite. Do you like it soft and chewy? Cakey and dense? Crisp and caramelised?

  • If the slice is dry or overcooked, then serve warm with a bit of cream, ice cream or yoghurt. Or leave cold and ice with lemon icing.
